How often may I operate the lever for one espresso?

For a single espresso, you only need to operate the lever once. Proceed as follows: Slowly pull the lever upwards and wait a few seconds until a few drops of espresso flow from the spout. Then pull the lever carefully and slowly downwards in one movement. The hot water is then pushed through the grind and your first espresso will pour gently into your cup and smell fantastic.

 The Cremina leaves it to the skill of the barista to achieve the required nine bar pressure on the portafilter by lowering the lever at just the right time.
